Adjust the amount of chile to preference, if you want it thicker add more. The more you add the spicier it gets. Baseline is 1/2 cup of chile powder to 2 cups of broth.

Ingredients
- 2 lb lean pork, cut into ½-inch cubes
- ½ cup flour
- ½ tsp salt
- 4 tbsp oil
- ½ cup NM Chile Co. Red Chile Powder
- 4–5 cups water or broth
- Garlic, oregano, and additional salt to taste
Directions
- Combine the flour and salt, then coat the pork cubes. Brown the pork in oil and bake at 325°F for 1 hour, stirring occasionally. Drain the excess fat and return the skillet to the stovetop. Stir in ½ cup NM Chile Co. Red Chile Powder, garlic, oregano, and 4–5 cups water or broth. Bring to a boil, then simmer for 10 minutes. Taste, adjust seasoning, and serve hot with warm tortillas.
