Red Chile with Pork

A timeless New Mexico classic that's rich, comforting, and built on authentic red chile flavor. This traditional recipe starts with tender pork, then simmers it in a homemade red chile sauce made with NM Chile Co. Red Chile Powder. Serve with warm tortillas for a meal that's been bringing people together for generations.

Chef's notes

Adjust the amount of chile to preference, if you want it thicker add more. The more you add the spicier it gets. Baseline is 1/2 cup of chile powder to 2 cups of broth.

Ingredients

  • 2 lb lean pork, cut into ½-inch cubes
  • ½ cup flour
  • ½ tsp salt
  • 4 tbsp oil
  • ½ cup NM Chile Co. Red Chile Powder
  • 4–5 cups water or broth
  • Garlic, oregano, and additional salt to taste

Directions

  1. Combine the flour and salt, then coat the pork cubes. Brown the pork in oil and bake at 325°F for 1 hour, stirring occasionally. Drain the excess fat and return the skillet to the stovetop. Stir in ½ cup NM Chile Co. Red Chile Powder, garlic, oregano, and 4–5 cups water or broth. Bring to a boil, then simmer for 10 minutes. Taste, adjust seasoning, and serve hot with warm tortillas.
