Biscuits

Delicious with chowder, stew, or on their own with some brown butter.

Ingredients

  • 4 Cups AP Flour
  • 2 Tbsp Baking Powder
  • 2 tsp Fine Sea Salt
  • 1 Cup Frozen Unsalted Butter, grated
  • 1 1/2 Cups Whole Milk, best quality

Directions

  1. Preheat your oven to 400 degrees F.
  2. Whisk the flour, baking powder and salt together until they’re evenly mixed.
  3. Add grated butter and toss gently until evenly distributed.
  4. Pour the milk into the flour mixture and stir with an upside down wooden spoon to form a dough mass. The handle of the spoon is gentler on the dough. This is important to not develop the gluten in the dough.
  5. Fold the dough over a few times with your hands until all the ingredients come together. If necessary add a few spoonfuls more milk to help gather up any stray flour.
  6. Pat the dough out on a lightly floured cutting board forming a loose round shape.
  7. Position on a baking sheet; sprinkle on a bit of coarse salt and coarsely ground pepper.
  8. Bake 15 minutes or until golden.
