Mama J's Dang Good Chicken Soup

## Chef's notes Use a tea bag to hold the spices. I like to fill it and drape it on the side of the pan so the flavors get in, and then toss it before serving. Easier than picking rosemary out of your teeth later! ## Details - ⏲️ Prep time: 20 minutes - 🍳 Cook time: 1 hour 45 from scratch, 45 if using chicken stock - 🍽️ Servings: 4 ## Ingredients - 1 Cup Carrots (sliced) - 1C celery (sliced) - 2 cloves garlic - 1 tsp dried thyme - 1/2 tsp dried minced onion - 2 Tbsp lemon juice (or more to taste) - 1/2 Tbsp salt (to taste) - 1 rotisserie chicken - 2 tsp dried rosemary (or 1-2 sprigs fresh) - 8 C water & additional 1-2 C later - 10 oz pre-cooked noodles - 1 tsp cracked pepper (to taste) ## Directions 1. Remove chicken meat from bones and set aside. Do not discard skin. Put bones and skin in a large stock pot and add water. Let boil covered for one hour, and then remove bones and strain out any bits of skin from broth. 2. Add chopped vegetables, spices, and lemon juice to broth with up to 2 C. additional water to replace what might have boiled away. Simmer over low to medium heat (covered) for another half hour, stirring occasionally. Add in chicken meat. Taste test and add additional salt if needed. 3. When vegetables are cooked, add in noodles and stir for an additional 2-3 minutes until hot (uncovered), and enjoy. 4. If using store bought chicken stock, only simmer until vegetables are cooked (about half an hour).

Fresh Strawberry & Vanilla "Extra" Jam

## Chef's notes A quick and easy recipe to help preserve your fresh strawberry harvest for months to come with the addition of vanilla to bring out that summer flavour. Made with 20% extra fruit than standard supermarket jam. To make a reduced sugar version you can use Pomona's Pectin or accept runny jam ;) ## Details - ⏲️ Prep time: 10 mins - 🍳 Cook time: 30 mins - 🍽️ Servings: 5 jars ## Ingredients - 1.2kg fresh hulled strawberries - 1kg golden cane sugar (can sub honey or maple syrup 1:1) - 1 lemon - 1 vanilla pod (or 1 tbspn extract) ## Directions 1. Remove the green stalks from your strawberries and cut into quarters 2. Pare the lemon zest and reserve for another recipe (such as lemon curd, or cocktails!), chop roughly and add to a pan inside a small muslin bag) 3. Gently cook the strawberries and lemon together with a lid on the pan for 15-20 minutes, until the lemon pith softens 4. Squeeze the muslin bag to get as much pectin out as possiblem then add 1kg sugar to the miture and boil on high 5. The jam can be tested for set after approx 10 mins boiling, spoon a small amount onto a chilled plate and place in the freezer for 2 minutes. If the jam wrinkles when pushed with a spoon it is ready to pot into sterlised jars. If it still appears runny cook for a further 5 minutes and repeat testing

Very Extra Gingery Rhubarb Jam

## Chef's notes Lovely tart rhubarb jam with the extra firey kick of fresh root ginger. Technically a vegetable rhubarb has low pectin content so be sure to include a high pectin fruit such as lemon/cooking apple/redcurrant/gooseberry. It also quite watery so we use a slightly higher fruit to sugar ratio (1.2:1) and evaporate off some water at the beginning. Testing for setting point: put a saucer in the freezer to chill whilst cooking the fruit, after 5 mins of a high boil with the sugar put a small blob of jam on the cold saucer and return to the freezer for 2 minutes. If the jam forms a solid wrinkle when pushed with a spoon it is ready, if it is runny continue cooking and retest every 5 mins The recipe can be halved for a small batch but if you have lots of rhubarb to process it is better to cook double batches in separate pans because it will take much longer to heat through, this affects the colour and flavour - the jam will taste warm and mellow rather than zingy Sterilise glass jars in a 120c oven and pot the jam hot leaving 1/4 inch head space, it will keep for 5 years unopened if the lids are well sealed and does not require water bath canning ## Details - ⏲️ Prep time: 20 mins - 🍳 Cook time: 30 mins - 🍽️ Servings: 6 (jars) ## Ingredients - 1.2kg Rhubarb - 200g Grated Root Ginger - 100g Chopped Crystalised Ginger - 1kg Sugar - 1 Lemon ## Directions 1. Chop the rhubarb into 1/2 inch pieces, peel and finely grate the fresh root ginger, chop crystalised ginger into tiny bits. Juice and quarter a lemon (discard pips) and add all these to a pan with a small amount of water 2. Simmer gently for 20 mins until the lemon and rhubarb are soft then add the sugar, stir until fully dissolved 3. Boil on high to reach setting point, usually at 105 degrees c or when a small blob of jam wrinkles on a cold plate instead of being runny 4. Remove the lemon pieces and pot into sterilised jars
