I got this recipe from the Tim Ferris's book, the 4 hour chef. You should also listen to his podcast with Nick Szabo, but I digress. This meal is quick, easy, and delicious. The book shows you how to do this using a dutch oven and oven bags to make cleanup easy, but I prefer to do it in the Instant Pot because it is faster. You could make it a little better if you seer the roast on a cast iron or stainless steel pan first, but I don't want to get into a debate.
