The Best Crispy Potato Latkes You’ll Ever Eat
Latkes are delicious crispy potato fritters that are commonly associated with Hanukkah, the Jewish “Festival of Lights,” but I recently learned that they were originally made in 13th century Italy, using ricotta cheese, and were often served during an entirely different holiday.
Potatoes weren’t introduced to Europe until the 1600s, when they were brought back from South America. They became a staple food throughout Europe by the 1800s, and during this time, the humble potato pancake, or latke, was born.
I look forward to making latkes this time of year, though they’re great anytime. They’re traditionally served with applesauce and sour cream, but you can also enjoy them for breakfast. They go great with eggs and smoked salmon.
